I am going to be honest with you, I am not a pasta lover. That bloated feeling followed by full blown exhaustion is just not appealing to me. I have eliminated carbs with a high glycemic index from my diet ( for the most part, It is all about balance my friends). I was beyond pleasantly surprised when a friend introduced me to quinoa pasta. Tresomega Nutrition Organic Quinoa pasta is my favorite one so far. My kids are definitely pasta lovers and this recipe is a happy middle ground for us.
1lbs Ground turkey meat
1/8 cup diced red onion
3 tablespoons of sofrito
2 tablespoons of olive oil
3 diced garlic cloves
1 tablespoon of turmeric
2 teaspoons of salt
2 tablespoons of cilantro
12 ounces of Muir Glen Organic Tomato sauce ( Basil)
1 8oz box of Tresomega Organic Quinoa Elbow pasta (spaghetti link above if you don’t like elbows)
Heat olive oil in medium sauce pan over medium high heat. Add garlic, cilantro, salt, sofrito, cilantro, red onion and turmeric and sauté for 4 minutes. Lower heat to medium and add turkey meat. Cook for 10 minutes stirring constantly ( make sure to break apart an cook until the meat is no longer pink). Add tomato sauce and stir. Cover and cook for another 10 minutes.
Cook pasta according to instructions on box and then combine with meat sauce.
