Mango Salsa

What goes with almost any meal, Is good for you and has been found to be simply irresistible?  My mango salsa! Kid tested and approved.


2 Mangos  Cubed (I prefer one that is very ripe and one that is still firm)

1 cup of cubed red onions

3  finely chopped chives stems

1 chopped red pepper

1/2 cup of chopped cilantro

1/2 cup of lime juice

1 teaspoon of olive oil

1 finely chopped garlic clove 

2 Tablespoons of chopped jalapeño pepper ( optional)

This is definitely the easiest recipe I’ve ever made. Simply combine all ingredients and stir. Your salsa can be eaten immediately or placed in refrigerator for 3-4 hours to allow the different flavors to blend and marinate.
