Brown Rice and Turkey patties

In my journey to make delicious and healthy meals for my girls, an oxymoron in their eyes, I have screwed up many, many, many  meals. Most recently a pot of brown rice. I will be honest and admit that it has taken me a very long time to master the art of cooking brown rice and just when I thought I was a pro I added too much water. Instead of fluffy grains I made a mushy porridge look-a-like. But alas my friends every dark cloud has a silver lining and I was not going to let a little thing like mushy rice get in the way of dinner. I decided to use the rice as a base for some yummy turkey patties! Kids tested and mother approved.




1 Cup of brown rice ( preferably cooked with too much water lol)

2 Cups of ground turkey meat

3 Tablespoons of Sofrito

2 teaspoons of ground turmeric

2 teaspoons of salt

1 teaspoon of ground black pepper

1 teaspoon ground oregano

1 Egg (Beaten)

1/4 cup ground pepper jack cheese ( Or cheese of choice)

1/4 Cup of cubed zucchini

2 Tablespoons of olive oil

In medium bowl combine rice, ground turkey, sofrito, turmeric, salt, pepper, oregano,egg, cheese and zucchini. Mix thoroughly.



Coat pan with olive oil and place over low/medium heat.

Form patties with mixture and place in pan, cook for approximately 8 minutes per side.


My kids loved it.  It contains complex carbohydrates, Protein and vegetables! I left out the cheese in the ones I prepared for myself and It made for easy meal prepping. What have you messed up in the kitchen that transformed into something else?
