Spinach and Feta Chicken Meatballs 

So it’s no secret to anyone that I love love love chicken and it loves me too! However it can get boring. How many chicken breasts can you have before you start to want fried chicken? Here’s a fabulous recipe that’s family and kid friendly and will kick those cravings right in the butt. Team pollo (Chicken).

Spinach and Cheese Chicken  Meatballs

1 lb ground chicken

I seasoned my chicken with: 3 tablespoons of sofrito, turmeric, sea salt and black pepper)

1 cup of chopped spinach

1/4 cup feta cheese

2 tablespoons olive oil

Combine all ingridients. Scoop large spoonful and roll into balls.

Warm olive oil in pan, place meatballs in and  allow to lightly brown and turn over and repeat. Add 8 tablespoons of water and cover for 20 minutes.
