So we all know that I have a love of sweet and a love of plantains ( and if you didn’t well know you know). Today when the craving hit I was tempted to have a piece of an amazing Tres Leches cake that my mom had on the counter ( yes I know I’m lactose intolerant). Instead inspiration hit and boom!
2 Yellow plantains
2 Tablespoons of cinnamon
1 Tablespoon of nutmeg
3 Tablespoons of PB2 ( powdered chocolate peanut butter) or real peanut butter if you’d prefer.
1 Tablespoon of coconut oil.
1 Tablespoon of Raw unfiltered honey
Peel and boil plantains for 20-30 minutes or until done. Mash Plantains ( just like mashed potatoes and add cinnamon, nutmeg and PB powder. Mix thoroughly. Coat a pan with coconut oil and place over medium heat. roll mixture into balls and flattened to desired size. Place in pan to brown on both sides. Once done sprinkle a bit of cinnamon powder and honey and enjoy. I recommend eating it with vanilla bean ice cream! ( those of you that can tolerate it 😉
