Eggplant Casserole


1 eggplant (peeled and diced)

2 celery stalks(ribs-diced)

1 garlic clove( crushed)

½ head of broccoli

½ head of cauliflower

2 cups of spinach

1 cup dry stuffing mix

½ cup red bell peppers

½ cup green bell peppers

½ cup yellow bell peppers

1 zucchini

1 yellow squash

½ diced onions( I used red)

2 eggs (beaten)

1TBS ground black pepper

1 cup mozzarella cheese

1 cup cheddar cheese


Microwave eggplant for 8 minutes on high, stirring at 4 minutes. In baking dish mix all ingredients. Leave approximately ½ cup of cheese to add to top of vegetables. Place in preheated over (350 degrees) for 15- 20 minutes ( I don’t like my veggies overly cooked so I did 15 min). Add cheese on top and bake for another 15 minutes ( I like to wait until the cheese is lightly browned).
